ABOUT FAIRVIEW ORGANIC LAMB:
Fairview Organic Lamb is part of the Kalleske family business. Kym and his parents, John and Lorraine Kalleske are 6th and 7th generations on the Kalleske property just out of Greenock.
Kym is married to Amie, who coordinates the lamb sales. They have 2 children, Hamish (2 yrs) and Jade (4 mths).
Our primary business is vineyard (some dating back to the 1850s), from which our grapes are the key ingredient in our favourite wine, "Kalleske Wines”, (see www.kalleske.com for more info). Kalleske wines is headed by Kym’s two talented brothers, Tony and Troy.
Here on the farm we also have a bit of cropping, and cut hay into chaff for fodder stores around the state. We are certified organic on the whole property and bring you this lamb because we love to share good-quality organic meat the way nature intended with as many people as we can.
THE LAMB:
We run just over 200 head of Wiltipoll sheep on our farm. We chose Wiltipoll not only for what we believe to be a superior flavoured meat, but also because we don't have to shear them. They lose their wool themselves, leaving pieces of it on fences and trees as they rub their coat off! We have been running them now for 5 or 6 years, starting out by having our butcher prepare the meat for our own consumption. For about 4 years we have been on-selling to people like you!

This Lamb is fabulous. It tastes completely different to "shop" lamb and is extremely tender, so I have no hesitation in recommending and selling it.
